Food safety hazards arising from pork production

ISSF plans to conduct fieldwork in Ndumbuini slaughterhouse, which is 3km from ILRI campus. The study aims to identify food safety hazards arising from pork production and consumption. Other study themes include animal welfare and regulation in the pork value chain in Nairobi and Kiambu counties.

At the slaughterhouse, we shall sample 500 pigs. We will approach pig traders and seek consent to sample their animals. We will begin by seeking content and ask about the origin of the pigs, production system, and how they were transported to the abattoir. We will let the animals go through the stunning process and blood will be collected at the exsanguination point. The government meat inspector and graduate fellows in the team will examine visceral organs and collect organs for laboratory processing and partial dissection.

Aside from the sample collection, MSc students will periodically visit the slaughterhouse to observe how animals are off-loaded and kept at the lairages awaiting slaughter. This is to assess animal welfare in their natural environment.
